Precise, tense, with a very fine citrus and stone character. The grapes' perfect ripeness and vibrant acidity allow the wine to show an abundance of fruit, minerality, and even a little salinity. We would have it with a pan seared flounder and buerre blanc, or cod fritters dipped in a mixture of lemon, dijon, and mayo.
