Domaine Joseph Cattin Pinot Blanc Alsace, 2023 cryo mosaic grown on clay-limestone soilsThis wine is made of 100% Pinot Blanc. The Domaine is named for the man who pioneered advances in grafting science, and whose work helped save many of Alsace's vineyards from the outbreak of phylloxera. The wine is sharp and minerally, showing classic aromas of white flowers and apple blossoms. The palate is like taking a bite out of a freshly picked Macintosh or Bosc with a kiss of honey. We would pair this with a fried chicken sandwich, topped with
