Give it 10 minutes in the fridge and pop it open with Veal or Eggplant Parmigiana. The grapes are destemmed and manually punched down in large wooden vats, where they macerate for 50 60 days. The wine is then aged in casks for a few years until bottling without fining or filtration. A classically sharp and grippy Nebbiolo meets the softer and earthier Vespolina and Croatina to make a
